Rebel winemaking — Fiano at its most electric and age-worthy.
Sabino Loffredo is the kind of winemaker who refuses to follow trends. From his steep, unforgiving vineyards in Montefredane he crafts Fiano that is smoky, chiseled and built to age for two decades — the opposite of the soft, easy whites that fill most supermarket shelves.
His parcels face the cold Apennine winds at 500 metres on pure clay-limestone, ripening slowly and unpredictably. The result is a Fiano of crystalline alpine acidity and a nutty, savory depth that rewards anyone patient enough to cellar it.
Pietracupa is one of the independent estates Luigi & Jo Di Caprio visit each harvest, tasting from barrel to bottle before a single case ships to our Surrey bonded cellar.
The soil that shapes the wine
Montefredane is exposed to the cold winds that funnel down from the Apennines, holding ripening back and preserving the Fiano's delicate aromatics. The clay-limestone soils give structure; the wind gives the wine its nervy, electric character.

Sabino Loffredo
I make Fiano the way my grandfather did — low yield, no shortcuts, and the courage to let it age. A great Fiano should taste of smoked hazelnut at ten years old.
